Here are two of my family's favorite recipes:

ENGLISH TRIPE AND ONIONS IN MILK

1 lb. tripe 2-3 onions, chopped
1 1/2 cups milk 2 bay leaves
salt and pepper, to taste butter
2 tbsp. finely chopped parsley mashed potatoes, to serve

CHINESE TRIPE STEW

2 lbs, tripe, in bite-sized pieces 3 tsp peanut oil
1 tbsp. minced or powdered ginger 1 onion, coarsely chopped
4 whole star anise 1 tbsp soy sauce
1 tsp. rice wine or sherry 1/2 tsp, Chinese five-spice powder
3 carrots, sliced on the diagonal 3 cups chicken broth

  2. Clean the tripe well by rubbing it with rock salt and rinsing it.
